The hard coat anodise process which is applied to aluminium pans hardens the surface and makes the underlying pan more durable. A natural result of this process is the change of aluminium from silver to a deep, dark grey. The resulting advantage of hard coat is they absorb the heat very well and produce an even bake.
These pans are excellent for proofing dough and available in base diameters of 7" to 14"
